Hi, I’m Jessie and welcome to my “Fresh Finds”! I am always looking for new vegan recipes and foods to try. I want to share with you some new recipes that I came across that look delicious and are not difficult to make. I’m a big fan of recipes that don’t have that many ingredients and can be made quickly, but also don’t lack in flavor. I also like to experiment and be creative with recipes trying to branch out and experience new meals.Most of these recipes come from our various cookbooks or sometimes from online sources. The Thrill of the Grill:
Corey and I love spending time out on our deck cooking on the grill. So when we came across plant-based burgers from Beyond Meat, we were excited to finally be able to eat burgers that didn’t taste like frozen patties. Then Beyond Meat did it again and came out with plant based sausages. We were in heaven! There are 3 flavors (Hot Italian, Sweet Italian, and Brats) and they all taste amazing! Toss them on a bun with some condiments or enjoy by themselves. These will continue to be stocked in our fridge during the summer.. or maybe the freezer if we pick up several because they go fast!
The BIG game is coming up in a few days and that only means one thing… appetizers galore! I always love bringing apps to parties or gatherings because they are easy to snack on during commercials. This Kale and White Bean Artichoke Dip from the Minimalist Baker sounds absolutely delicious and I’m sure it would be a crowd pleaser for game day. It’s easy to make and only has 10 ingredients! I can’t wait to dive into this dip on Sunday! I’ll let you know how it turns out!
Update 2.5.18: We made this recipe for the Super Bowl and it was absolutely delicious!! We will definitely be making this again!
Who doesn’t enjoy breakfast? It’s my favorite meal of the day! This recipe for Life-changing banana walnut pancakes looks amazing! They are easy to make, fluffy, wholesome and nutritious! The best part is that they have bananas which are a runners’ favorite after racing. We will definitely be trying this out soon.
If you ever wanted to spice up your lunch salad, then you have to try this! This Cashew Thai Quinoa Salad with Peanut Ginger Sauce recipe sounds absolutely delicious! It’s soo bright and colorful! I love peanut sauce and when I saw this recipe, I knew we had to try it! This salad is packed with essential vitamins and goodness that any runner would enjoy!
One thing I love about bowls is the fact that you can pretty much throw anything together to make a great meal. This recipe is no different. The Roasted Plantain and Black Bean Vegan Bowl from The Minimalist Baker looks amazing! I’ve always wanted to try adding plantains into a dish and this now gives me a reason to! I’m super excited to try this recipe out! (Adding ingredients to my cart as we speak).
It’s March and that means Spring is almost here! Before we dive into warmer weather there’s one holiday we need to call attention to… St. Patrick’s Day! This holiday brings us delicious meals from Shepard’s Pie, Bangers and Mash, and Beef Stew! I’ve always wondered what a vegan beef stew would taste like… something with tons of flavor and depth and I came across this Seitan Porcini Beef Stew from Isa Chandra. This recipe looks soo good and I’m excited to test it out!
